Wild Venison Haunch is one of the lean cuts, full of protein, an ideal family roast.
Unlike most roasts there is little fat on the Haunch. So cook carefully to avoid the joint from drying out.
The joint is best served medium rare to keep moist.
The joint may separate a little after roasting, this is quite normal due to the way the joint is butchered.
