Mallard breast are very rich and full flavoured in taste. Very diffrent from farmed ducks. Their very varied diet creates this unique flavour. They can be pan fried with the skin served crispy or added to a cassarole. They go very well with fruit, port and red wine.
This product is currently out of season and is only available frozen and should be consumed within 3 days once defrosted.
